I love a quick on-the-go easy meal! My mornings can be a bit wild: showering the boys, picking outfits, you get the picture. I love easy homemade recipes and I’ve created this great 150 calorie muffin that anyone can enjoy with coffee, hot cocoa, milk or just as a light snack.

Pumpkin Muffin Recipe Batter

Banana Bread Muffins – with Almonds and Cinnamon

The ingredients you will need:
– 3 medium ripe bananas
– 3/4 cup sugar
– 1/4 cup of oil
– 1.5 cup of all purpose flour
– 1 egg
– 1.5 teaspoon baking soda
– 1 tablespoon cinnamon
– 1/2 – 1 cup of sliced almonds

Pumpkin spice muffins

Directions

  1. Pre-Heat oven to 325*
  2. Mash ripe bananas in a bowl
  3. Add and mix the egg, sugar, and oil
  4. Add the baking soda, flour, cinnamon, almond slices and stir
  5. Place into cupcake/muffin cooking sheet with cupcake/muffin liners
  6. Bake for 20-25 mins
